30 ozblack beans, cannedrinsed and drained 2 tspoil 1papayapeeled, seeded, and diced 1bell peppers, redfinely chopped 0.5 cupred onionfinely chopped 0.5 cuporange juice 0.25 cuplime juice 2 tbspcilantrochopped 0.25 tspcayenne powder 2 clovesgarlicfinely chopped 0.5 tspsalt 5 cupsricecooked
  1. In a 10-inch skillet, heat oil over medium heat.
  2. Cook papaya, bell peppers, red onion, orange juice, lime juice, cilantro, cayenne powder, and garlic about 5 minutes, stirring occasionally, until bell pepper is crisp-tender.
  3. Stir in beans.
  4. Cook about 5 minutes or until hot.
  5. Add salt to taste, around 0.5 tsp.
  6. Serve with rice.
