2 lbscauliflowerchopped roughly 1 cancoconut milk 3 tbspcurry powder 1 tspsalt
  1. Pour the coconut milk into a stockpot and bring to a boil.
  2. Add the chopped cauliflower, reduce heat to a simmer, and cover. Simmer until cauliflower is soft, around 30 minutes.
  3. Add the curry powder and salt and mash the cauliflower well to combine everything.
