- Preheat oven to 350 degrees F (convection bake)
- Mash bananas
- Add oats to mashed bananas and combine well. Let it sit for 20 minutes to allow the oats to absorb some of the moisture.
- Mix in the chocolate chips
- Scoop one heaping tablespoon of the dough into your hands and free form into a cookie. Place on cookie sheet lined with parchment paper and continue until you have 12 cookies.
- Cook for 15 minutes or until set through and lightly golden. Cool and enjoy!
Notes:
- Original recipe called for using 1 cup quick oats, 0.5 cup rolled oats. Quick oats allows for quicker absorption of moisture so you would not need to let the oats sit for 20 minutes. You can also make quick oats at home – simply measure 1 cup of whole oats and pulse in the blender or food processor about 5 times.
