  1. Put the sesame seeds in a large skillet over medium-high heat. Cook, shaking the pan frequently, 2 or 3 minutes until the seeds are lightly browned. Transfer to a small bowl.
  2. Put 2 tbsp oil into the skillet over medium-height heat.
  3. Cut the chicken into small chunks.
  4. Add the chicken to the skillet, sprinkling with salt and pepper. Cook until the chicken is cooked through. Transfer the chicken to another bowl.
  5. Whisk together the cornstarch and water in a small bowl.
  6. Add 2 tbsp oil into the skillet along with the ginger, garlic, and snow peas. Cook 2-3 minutes until the peas are slightly tender but still crunchy.
  7. Add lemon juice, soy sauce, and honey to the cornstarch mixture and whisk to combine.
  8. Return the chicken to the skillet and add the cornstarch mixture and sesame seeds.
  9. Cook, stirring until the chicken and snow peas are coated in a thick sauce. Adjust seasoning and serve.
