- Put the sesame seeds in a large skillet over medium-high heat. Cook, shaking the pan frequently, 2 or 3 minutes until the seeds are lightly browned. Transfer to a small bowl.
- Put 2 tbsp oil into the skillet over medium-height heat.
- Cut the chicken into small chunks.
- Add the chicken to the skillet, sprinkling with salt and pepper. Cook until the chicken is cooked through. Transfer the chicken to another bowl.
- Whisk together the cornstarch and water in a small bowl.
- Add 2 tbsp oil into the skillet along with the ginger, garlic, and snow peas. Cook 2-3 minutes until the peas are slightly tender but still crunchy.
- Add lemon juice, soy sauce, and honey to the cornstarch mixture and whisk to combine.
- Return the chicken to the skillet and add the cornstarch mixture and sesame seeds.
- Cook, stirring until the chicken and snow peas are coated in a thick sauce. Adjust seasoning and serve.
