  1. Place all ingredients except cilantro and pepper in a 4-quart electric slow cooker; stir well and cook on low for 7 hours or until vegetables are tender. Once cooked, the lentils will be tender and most of the liquid should be absorbed.
  2. Taste and add salt if needed. or other spices as needed.
  3. Sprinkle with cilantro and black pepper.
