  1. Prepare tofu as per “plain pan-fried tofu” recipe. https://chomp.staktrace.com/recipes/plain-pan-fried-tofu.html
  2. Mix ingredients for the sauce (ketchup, water, corn starch, sugar, soy sauce, rice vinegar) as tofu is being blanched
  3. Remove tofu from pan and add more oil to pan if necessary. Fry garlic, scallion white and ginger over slow fire until aromatic.
  4. Pour the sweet and sour sauce into pan and bring to boil.
  5. Return the tofu cubes and continue heating over slow fire until the sauce is well-thickened and sticky to the tofu cubes.
  6. Garnish with some spring onions and serve with steamed rice.
