- Whip 4 eggs in a stand mixer on high-speed for about 1 minute.
- Add 1.5 cups powdered sugar (or 1 cup of granulated sugar) in thirds while continuing to whip. Continue whipping for 15-20 minutes (until the batter doesn't fall off the whisk for 2-3 seconds)
- Sift the flour and baking powder to remove any clumps.
- Mix the 3 tbsp melted butter with 2 tbsp hot water and whisk together.
- Add 1 tbsp of vanilla extract to the whipped eggs.
- Sift the flour mixture into the whipped eggs in batches and fold with a spatula. Fold just enough to incorporate the flour, avoid overfolding. Make sure to fold all the way from the bottom to mix stuff that sinks.
- Add the melted butter mixture and fold until no streaks are seen.
- Grease a 8-inch round cake pan and pour the batter into it.
- Bake for 30 minutes at 350 degrees, until a toothpick comes out clean.
- Move it to a cooling rack and let it sit for 5-10 minutes.
- Remove it from the cake pan and flip, allow it to cool completely.
