  1. Whip 4 eggs in a stand mixer on high-speed for about 1 minute.
  2. Add 1.5 cups powdered sugar (or 1 cup of granulated sugar) in thirds while continuing to whip. Continue whipping for 15-20 minutes (until the batter doesn't fall off the whisk for 2-3 seconds)
  3. Sift the flour and baking powder to remove any clumps.
  4. Mix the 3 tbsp melted butter with 2 tbsp hot water and whisk together.
  5. Add 1 tbsp of vanilla extract to the whipped eggs.
  6. Sift the flour mixture into the whipped eggs in batches and fold with a spatula. Fold just enough to incorporate the flour, avoid overfolding. Make sure to fold all the way from the bottom to mix stuff that sinks.
  7. Add the melted butter mixture and fold until no streaks are seen.
  8. Grease a 8-inch round cake pan and pour the batter into it.
  9. Bake for 30 minutes at 350 degrees, until a toothpick comes out clean.
  10. Move it to a cooling rack and let it sit for 5-10 minutes.
  11. Remove it from the cake pan and flip, allow it to cool completely.
