1onionsdiced 1 tbspgarlicminced 4zucchinicubed 3tomatoes, romacubed 4 cupsrice, cooked 1 canblack beans, canneddrained and rinsed 1 tsppaprika 1 tspbasil 1 tspthyme 1 tspsalt 0.5 tspred pepper flakes
  1. Heat oil in large pan
  2. Add onion and garlic to pan, sauté for a few minutes until onion translucent
  3. Add zucchini, sauté until slightly soft and then add tomatoes. Cook for a few more minutes until zucchini and tomatoes almost fully cooked
  4. Add rice, black beans, and spices. Stir well and keep cooking until everything is heated through
